A hearty recipe that is all about flavour but it does take a bit of time!
Ingredients:
500ml (2 cups) hot water
2 pork rib racks
1/2 cup tomato sauce
1/4 cup Worcestershire sauce
1/4 cup brown sugar, firmly packed
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp paprika
1 tsp Smoke and Peri
1 tsp dried oregano leaves or drop of Smoke and Roast Oregano Essential Oil
1 tsp ground cumin
Method:
Preheat oven to 180C and meanwhile place tomato sauce, Worcestershire, sugar, vinegar, mustard, paprika, smoke and peri, oregano and cumin on the stovetop in a saucepan and heat gently. You must stir continually until the sugar dissolves. Once this is done you should then bring it to simmer to thicken the sauce - but don’t let it boil.
Combine the hot water and 2 tbs glaze in a roasting pan. Add the ribs. Cover the pan tightly with foil. Bake the ribs, turning once, for 2 hours or until tender.
Brush ribs with the remaining glaze. Preheat a barbecue grill or chargrill pan on medium. Cook ribs for 4-5 minutes on each side or until caramelised and slightly charred.
Cover ribs with foil and set aside for 2-3 minutes to rest before carving.
