Baked Zucchini Side

Zucchini rule at the moment, with a glut coming from the garden. We’ve been eating them like crazy and have just discovered this great recipe, which we use to serve with just about anything. 


4–5 medium zucchini, sliced into 1/3 inch thick disks (about 5 cups)

2 tablespoons olive oil

1 freshly minced garlic close or a drop of Smoke and Roast Garlic Essential Oil 

A sprinkle of Smoke and Curry (or Smoke and Peri - take your pick!) 

1/4 cup finely grated pecorino cheese or parmesan 

6–8 torn fresh basil leaves or a drop of Smoke and Roast Basil Essential Oil 


Heat your oven to about 300 degrees, slice up your zucchini and place in a bowl and drizzle with olive oil, sprinkle with Smoke & Curry, garlic and optional chili flakes.  Place on a single layer on a parchment-lined sheet pan. Lightly sprinkle each slice with 1/3 teaspoon grated pecorino.  

Bake in the oven until tender with a fork, should be about 30 minutes. Serve up with fresh basil!
