This is another simple but hearty meal. Chicken and corn soup is a clear broth with lots of flavour. Great for a winter warmer or we make it when someone has the sniffles.
Ingredients
1 dash of olive oil
500 grams of chicken diced
1 tin of corn or halved corn cobs
1 chicken stock cube
1 potato cubed
Spring onions
1 zucchini
Sprinkle of Smoke and Roast
Water to cover the ingredients
Lime to squeeze on top before serving
Method
In a large pot with lid on stove top, and put in the olive oil and chicken pieces, with the crumbled stock cube. Quickly brown, then add all the other ingredients including the sprinkling of Smoke and Roast, except for the spring onions and lime juice. Cover in water till covered and turn to simmer with the lid on. Simmer for about 30 minutes.
Serve with sprinkling of spring onions and squeeze of lime juice.
