Now that the cooler months are here, we thought we’d share our one pot easy stew that is healthy and warming.
Ingredients
3 tablespoons unsalted butter
1 ½ cups chopped onion
2 carrots, cut diagonally into 1 1/2-inch pieces (1 1/2 cups)
3 large garlic cloves, smashed or a drop of Smoke and Roast Garlic Essential Oil
1 cup quartered mushrooms
1 cup sliced celery
4 cans diced tomatoes
1 large zucchini sliced and quartered
2 small finger eggplants
2 cups unsalted vegetable stock
1 dash of Smoke and Curry
8 baby potatoes halved
Method
Melt butter in a large, heavy pot over medium-high heat. Add onion, carrots and garlic; cook, stirring occasionally, until the onion is tender, for about 4 minutes. Add mushrooms, zucchini, eggplant and celery; cook, stirring occasionally, until the mushrooms, start to soften, about 4 minutes, then add your Smoke and Curry for zing and flavour. Add tomatoes, stock and potatoes; bring to a boil over high heat and then reduce to medium-low; cover and simmer until the potatoes are tender, about 15 minutes.
