The chickens are back on the lay! So we’ve been doing a big quiche for quick lunches during the week.
We have literally been throwing whatever is in the fridge we have but these are basics.
Ingredients:
10 eggs
Filo pastry for your shell
A hand full of grated cheese
1 healthy pinch of Smoke and Roast
Grated veggies like zucchini, spinach
A hand full of chopped ham
Cherry tomatoes artfully arranged on top
Method:
Place eggs in a bowl and whisk, then add the rest of the ingredients and mix. Place your pastry in your pie dish and pour your ingredients in. Bake for about 40 minutes till set.
Best served slightly warmed for 30 seconds in the microwave.
