Creamy Lentil and Sweet Potato Soup

A great healthy soup, that is quick and filling is a lentil and sweet potato soup. This recipe takes no time at all to make and freezes really well. 

Ingredients: 

1 cup onion 

2 cloves fresh minced ginger 

1 healthy pinch of Smoke and Roast 

4 cups peeled, cubed sweet potato 

3/4 cup red lentils

2 cups vegetable broth

1 cup water

1/4 tsp ground smoked paprika 

Full-fat yogurt 

Method: 

Heat a large pot add a sprinkle of oil and gently cook onion and garlic. Season with a healthy pinch Smoke and Roast. Sauté for 3-5 minutes, stirring frequently, or until onion is translucent. Add a little water if it is sticking. 

Add sweet potato and stir. Sauté for 5-7 minutes, stirring frequently and adding a little more water as needed to prevent sticking.

Add red lentils, vegetable broth, water, and paprika and stir. Bring to a gentle boil, then reduce heat, cover, and allow to simmer for 15-20 minutes, stirring occasionally, or until sweet potatoes and red lentils are tender.

Purée and serve with a dollop of yogurt. We like to add a sprinkle of pumpkin seeds on stop as well.
