Are you a chilli fan? Do you have a week bush in the garden but don’t know what to do with them all? We’ve had a bumper crop this year, and we are chilli fans. So we tried our hand at a simple chilli sauce which turned out great. We kept it simple but imagine we will add to it next time, perhaps with garlic or onion and some other herbs! It’s a great base recipe.
Ingredients:
400 grams red chillies
2 large tomato
2 tablespoon Smoke and Roast
1/3 cup olive oil
1/2 cup apple cider vinegar
A pinch of sugar
Method:
Cut off the stems and roughly chop the chillies (you can exclude the seeds or keep).
Add the chillies to a blender, with the roughly chopped tomato, olive oil, vinegar, Smoke and Roast and sugar and blitz to a smooth consistency.
Taste the sauce and adjust seasonings as necessary.
Store in a sterilized jar and enjoy it immediately or store it in the fridge for longer-term storage.
Serve with … well everything!
Stay well everyone,
Vanessa Hicks
