Simple and healthy is this recipe!! It’s super quick to make and delicious with a little Smoke and Peri to really make it pop. We also like it because it’s flexible for the family to tailor what extras they add (think avocado, a squeeze of lime juice…)
500 grams Mince turkey (or chicken): will feed about 4 adults
2 tsp coconut oil
2 x Shredded carrots.
Shallots or chives
Garlic clove crushed
Splash fish sauce
Splash soy sauce
Fresh chillies if you like it spicy!
A smattering of Smoke and Peri
Butter or cos lettuce leaves (you just want them to act as a cup to hold your mince)
In a non-stick frypan heat the coconut oil and quickly brown the mince. Add a smattering of Smoke and Peri at this stage. Then add your carrots, shallots, garlic, fish sauce, soy sauce and chillies. Cook for a few minutes until the mince is done.
Serve in the lettuce cups with extras on the side like avocado, halved cherry tomatoes, fresh coriander, limes to squeeze for extra zest.
