Zingy Tomato Pasta


We all need a recipe that can be made from staples in your pantry and this is it. 

Ingredients (serves 2): 

1 tbsp olive oil

1 brown onion, chopped

2 garlic cloves, crushed

1 x 800g can Italian diced tomatoes

1 tbsp tomato paste

1/3 cup chopped fresh continental parsley

1/2 tsp caster sugar

400g penne or similar

A sprinkling of Smoke and Peri


Heat the oil in a pan and heat, then add onion till it softens. Then add garlic and a sprinkle of Smoke and Peri. Next are the tomatoes and tomato paste. Bring this to a simmer and cook for 5-8 minutes till you can see it’s thickening. When it’s done, stir the parsley through. 

While the sauce is cooking put your pasta on to cook. 

When both are done serve with an optional smattering of parmesan or even crumbled feta and more fresh parsley, or halved cherry tomatoes. MMMM.
