Favourite Veggie Mix to Go with Lamb!

Ok, so lamb chops are easy right but how do you make them ‘sing’! Well, we like to combine lamb chops with this simple veggie combo that just seems to take the chops to the next level of taste sensation.  Ingredients:  3 tomatoes finely chopped  1 zucchini diced  ½ tin of corn OR green capsicum finely diced ½ cup capers  1 small pinch of Smoke and Roast  Method:  Place the tomatoes in a frying pan with a dollop of olive oil, along with the other veggies except for the capers. Now that avocados are no longer priced at a point where they threaten our mortgage, we thought it was time to double down on the creamy fruit.  The best way to approach this is to understand the best way to make a guacamole. The chickens are back on the lay! Cauliflower, How Many Ways?

We have recently discovered how amazing cauliflower can be! Here are the ways we’ve been serving it up lately.  Cauliflower mash - simply steam, puree with a clove of garlic, then a little dollop of butter and a sprinkle of Smoke and Roast Peri. Creamy Lentil and Sweet Potato Soup

A great healthy soup, that is quick and filling is a lentil and sweet potato soup. This recipe takes no time at all to make and freezes really well.  Ingredients:  1 cup onion  2 cloves fresh minced ginger  1 healthy pinch of Smoke and Roast  4 cups peeled, cubed sweet potato  3/4 cup red lentils 2 cups vegetable broth 1 cup water 1/4 tsp ground smoked paprika  Full-fat yogurt  Method:  Heat a large pot add a sprinkle of oil and gently cook onion and garlic.
